I am trying to Apply to Sell Nike. When I go to Add Product and pull up the ASIN ... it appears ALL Nike products are just flat out "Not Available". Is this because its December? Help!

This is because Nike does not want sellers to offer their products on Amazon. They make this declaration on their own website. They are one of the brands most active in patrolling Amazon to get rid of sellers. Yes, there are many. Eventually they will be taken down.
DO NOT attempt to sell on Nike on Amazon.
Do not confuse being able to sell with having the right to sell. Only the brand owner can grant the right to sell, and Nike will not do that.

I guess finding that all of the ASINs are "Not Available" is why we see fewer Nike threads these days. Until fairly recently, you could list your Nike products.
The process went like this:
1) List Nike. Maybe even sell a few
2) Get suspended, since you don't have invoices to prove authenticity
3) Come to the forums to complain, only to be told that you can't sell Nike, you'll never sell on Amazon again, and you'll not see any funds in your account.
So you're ahead of the game. You still have an account.
Next step I suggest is to go through Seller U, paying special attention to Sourcing Guidelines. Then spend at least a week reading the forums.

Thanks for reaching out. Amazon requires approval to sell in many categories, brands, and products and in some instances restrictions and policies change. As the Amazon catalog grows, we continuously make new determinations on which products should be restricted, which is based on a number of factors. Amazon does this to ensure authenticity and customer satisfaction. At this time, the only way to be able to list these items is if there is an option to apply to sell through Seller Central. At this time, unless you are approved by Nike and added to their Brand Registry, you will not be able to list this brand. You can find a link to the policy here.

YOU CAN'T SELL NIKE ON AMAZON.
If you really want to try, then you will need to contact Nike directly; tell them that you would like them to change their corporate policy regarding online sales, and want to be the one-and-only authorized seller on Amazon (might as well go for eBay, Walmart dot com, and any other ecommerce site while you're at it), and ask them what you need to do. They've decided to loosen up a bit on their previous stance; it may be possible now for an investment of only a few hundred thousand up front, although that might be not be enough to convince them that you are serious.
Good luck even getting a response from Nike.
